Ingredients:

  • 1 large, sweet potato

  • 1/2 cup almond flour

  • 1/2 cup cocoa powder

  • 1/2 cup maple syrup

  • 1/4 cup melted coconut oil

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1/4 tsp salt

  • Optional: vegan chocolate chips, chopped nuts

Instructions:

  1. Begin by preheating your oven to 350°F (180°C) and lining a baking dish with parchment paper.

  2. Peel and chop the sweet potato into small pieces, then steam or boil until they are soft and tender.

  3. Mash the steamed sweet potato in a bowl until it turns into a smooth puree.

  4. To the sweet potato puree, add almond flour, cocoa powder, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt. Mix together until you achieve a silky-smooth brownie batter.

  5. If you’re looking to add an extra layer of flavor fold in some vegan chocolate chips or chopped nuts into the batter at this stage.

  6. Pour the delectable mixture into the prepared baking dish and use a spatula to smooth out the top, ensuring an even bake.

  7. Bake in the preheated oven for approximately 25–30 minutes, or until a toothpick inserted into the center of the brownies comes out clean.

  8. Patience is key! Allow the brownies to cool in the pan for at least 10 minutes before cutting them into squares and serving.
